Peanut Butter and Potato Candy surprisingly good Christmas recipe
Peanut butter and potato candy. It sounds gross, but it’s really awesome. You’ll need the following:
INGREDIENTS
1 very small baking potato
Peanut butter
White powder sugar
DIRECTIONS
Peel, dice and boil potato until tender. Remove from pan and let dry well. When completely dry, mash well with a fork or potato masher. In a bowl slowly add powder sugar while stirring with a wooded spoon.
Don’t add too much because it will make the mixture too runny. You want the mixture to have the consistency of cookie dough. Lay a sheet of wax paper on the counter and form the potato mixture into a long flat piece.
The thickness should be about 1/2 inch thick or a little more. Roll it out even and smooth. Take the peanut butter and with a butter knife spread it completely over your dough roll. You can add as much as you want.
Make sure it’s covered completely. Then start forming into a roll. Try to keep the ends and the shape smooth and consistent. When the roll is formed take the knife and begin slicing in small pieces from one end to the other.
You should have a least 25 pieces. Place in a container and put in the refrigerator until ready to serve. You can eat immediately, but it’s better when colder.
Don’t make the same mistake I did. Make sure the potato is SMALL. I thought if I use a bigger potato, I’ll get more pieces of candy. I used two bags of powder sugar and the mixture was still just like water.
I had to pour it out and start over with a small potato. Sometimes more is NOT better. I can’t remember where I got the recipe, but I remembered it. It’s very rich and sweet.
Don’t knock it till you try it. Let people eat a piece before you tell them what’s in it. They’ll be pleasantly surprised. This can be served with anything. Great for finger food day at work or church.

I have had the White Potato Peanut Butter candy before and it is very good! My Step-dad used to make it all the time when I was growing up, it was the best. I’ll be making some tonight for my children who are 19 and 22!
