Prime Rib

Ingredients
8 pounds prime rib roast
3 teaspoons grated fresh ginger root
1/3 cup orange marmalade
4 cloves garlic, minced
3 tablespoons soy sauce
2 tablespoons brown sugar
1/4 teaspoon hot pepper sauce
1 tablespoon mustard powder
1 cup beer
1/4 cup olive oil
ground black pepper to taste

Directions

Preheat oven to 400 degrees. Combine ingredients 2-7. Slowly add the beer. Create several small slits in the surface of the roast with a knife. Place roast in a large, nonreactive bowl and add marinade. Marinate for four hours, turning or basting the meat several times. Remove meat from marinade. Do not discard marinade. Place roast on a wire rack in a roasting pan. Add about 1 cup of marinade to roasting pan. Pour olive oil over roast. Sprinkle roast with freshly ground black pepper. Insert roasting thermometer into the middle of the roast, making sure that the thermometer does not touch any bone. Cover roasting pan with aluminum foil and seal edges tightly around pan.After 1 hour, remove foil cover and bate the meat. Do not replace the cover. Cook for another 60 minutes at 325 degrees. If you prefer a rare roast, allow the internal temperature to reach 140 degrees; if you prefer a more well-done roast, the internal temperature should reach 170 degrees. Remove roasting pan from oven, Let the roast rest for approx. ½ hour before slicing and serving.
