Scallop potatoes on Christmas dinner
One of my favorite dishes to have at Christmas dinner is scallop potatoes. I got the recipe of scallop potatoes from my Mom who got it from her mother and I think that’s one of the reasons it’s my favorite.
When I make this dish I think about my grandmother and it’s almost like she’s still with me. Whenever I make this dish from scratch, it gives me a warm sentimental feeling. This is a dish that I really enjoy making for others; it makes me feel like I am sharing a little bit of my family with them.
To make scallop potatoes you layer sliced potatoes, cheese, flour, butter, over and over to fill a baking dish. Then you fill the baking dish with milk, cover, and bake for an hour. Scallop potatoes are yummy with almost anything, but our traditional Christmas dinner combines them with fried turkey, green been, rolls, and a Jell-O salad.
If you are looking to serve scallop potatoes at other times of year, I would suggest pork or chicken selections. My husband and I have served scallop potatoes with pork loin and baked chicken dishes when we have had company.
One time saving tip for making scallop potatoes is to make them ahead of time. I usually make them the day before the event where I intend to serve them. This way, I don’t have to worry about needing to have the oven at different temperatures for different dishes.
I just slide the potatoes into the oven 20 minutes before I am ready to serve dinner, at whatever temperature the oven is already at. I actually think that the potatoes taste better when they’ve been baked twice.
I have bought the boxed scalloped potatoes at the grocery store to have for quick weekday meals, but they just are not the same as making them from scratch. Making from scratch can take a long time, but the final product is definitely worth the effort.
Everyone I have ever made this dish for has been very impressed and I never have trouble giving the leftovers away, if there are any.
